An absolutely delicious Roast Chicken, the Moroccan way !!! An unusual but fantastic mix of preserved lemons, harissa, and cinnamon. This is haute cuisine at home. The sauce is special, Moroccans have a special name for it: Deghmira .Don’t worry if you can’t pronounce that right, it’s still taste amazing !!!

Ingredients

1.5 kg / 3lbs Whole Chicken.

1 Tbsp of Sea Salt

2 Lemons juiced

Water (Equal amount to lemon juice).

2 Tbsp of Olive Oil

1/4 tsp Sea Salt

1/4 tsp Black Pepper

1/4 tsp Cinnamon

1/2 tsp Ginger

1 tsp of Harissa

2 Tbsp of Parsley

2 Crushed Garlic Cloves

1/4 of a Preserved Lemon

Pinch of Saffron with a cup of hot water.

1 Tbsp of Vegetable Oil

1 Tbsp of Ghee

2 Medium Onions Grated and drained of all it’s water

1/4 tsp Black Pepper

1/4 tsp Cinnamon

1/2 tsp Ginger

1 tsp of Harissa

2 Tbsp of Parsley

2 Crushed Garlic Cloves

1/4 of a Preserved Lemon.

400 ml / 1.5 Cups of Hot water

20 Olives (Dark Purple or Kalamata).

1 Tbsp of Unsalted Butter

10 to 15 minutes Grill Option or Top heat 360 F / 180 C.
