Hearty One-Pot Chicken Stew

  • 1 pound chicken thighs (boneless, skinless)
  • 4 medium potatoes, peeled and cubed
  • 3 carrots, sliced

  • 2 garlic cloves, minced
  • 1 cup celery, chopped
  • 4 cups chicken broth
  • 1 tablespoon olive oil
  • 2 bay leaves
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add the chicken thighs and cook until browned on both sides, about 5 minutes per side. Remove and set aside.
  2. In the same pot, sauté onions, garlic, and celery until soft.
  3. Add carrots and potatoes to the pot. Stir in thyme, bay leaves, salt, and pepper.
  4. Return the chicken to the pot and pour in the chicken broth.
  5. Bring to a boil, then reduce the heat and let it simmer for 30–40 minutes until the vegetables are tender and the chicken is cooked through.
  6. Remove the bay leaves and shred the chicken using two forks. Stir everything together and simmer for an additional 5 minutes.
  7. Serve warm with crusty bread or over rice for a complete meal.
